Ever find yourself caught up in the chaos of the workweek, struggling to put together a decent meal at the end of a long day? If you’re like me, then you know the struggle all too well. That’s why I started Meal Prep Mondays – a time-saving solution that has changed the way I approach dinner time. After receiving such positive feedback from my last post, I’ve decided to make this a regular thing!
This weekend, I geared up for the week ahead by meal prepping a variety of delicious dishes to save time and stress during those hectic weeknights. Here’s what I prepped, along with our dinner menu plan for the upcoming week!
What I Meal Prepped
- Taco Meat: Two pounds of browned ground beef seasoned with taco seasoning. I also set aside some plain browned beef for Silas to use in his lunches. He enjoys simple recipes with ground beef and potatoes or rice. Additionally, I reserved some for a spaghetti casserole dish.
- Spaghetti Casserole: A comforting mix of spaghetti noodles, jarred sauce, browned ground beef, and a mixture of cottage cheese, egg, and mozzarella cheese. Baked to perfection, this casserole is a crowd-pleaser.
- Ham & Beans: A hearty dish made from a mix of canned beans and leftover ham. Boiled and simmered with water for a flavorful and satisfying meal.
- Homemade Crackers: A delightful snack that turned out spectacularly. Stay tuned for the recipe later this week!
- Cinnamon Roll Muffins: A blend of cinnamon roll flavors in muffin form, offering the best of both worlds. Keep an eye out for the recipe coming soon!
- Healthy Peanut Butter Protein Balls: Surprisingly delicious and healthy, made with PB powder, applesauce, and protein powder. Don’t miss out on the recipe I’ll be sharing soon!
Menu Plan This Week
- Sunday: Scrambled Eggs, Chicken Sausage, Fresh Apple/Carrot/Orange/Beet Juice
- Monday: Ham & Beans, Honey Cornbread, Apple Slices
- Tuesday: Spaghetti Casserole, Homemade Rolls, Steamed Veggies
- Wednesday: Dinner out for Kathrynne’s 20th birthday
- Thursday: Just Bare Chicken Nuggets, Homemade Bread, Tater Tots, Steamed Veggies, Applesauce
- Friday: Taco Bowls – taco meat, rice, beans, lettuce, tomatoes, cheese, and homemade tortillas
- Saturday: Leftovers or Frozen Pizza
